1. Raw material selection: Use dried fungus or fresh fungus without mildew and deterioration.
2. Raw material treatment: dry fungus put into the clear water bubble 3 hours dip, fresh fungus do not soak. Cut off the pedicles of the fungus with scissors, and cut the large flowers into blocks or strips of about 2 cm, wash them with water, and drain them.
3. Sugar powder: White granulated sugar is ground into steel powder of 80-100 mesh.
4. Ginger: Prepare a 50% sugar aqueous solution and put the fungus into the pot. The ratio of fungus to sugar is 1:2. After cooking for 10 minutes, the fungus and sugar liquid were poured into a clean bucket for 6-8 hours. Then remove the fungus, and pour the remaining sugar and water solution into the pot, add sugar to a sugar concentration of 70%, add citric acid, 0.3% sugar liquid, 0.05% sodium benzoate, and pour the fungus into the pot. Bring the fire to boil, then switch to slow fire. During the cooking process, stir constantly to prevent scorching. Add sugar again, control the sugar concentration of 64% to 70%, continue cooking for 60 minutes, you can remove the fungus, filtered sugar.
5. Sugar coating: After the fungus has been cooked, cool it to 50°C to 60°C and mix it with white granulated sugar and mix well.
