The temperature on the dish is kept at about 90°C on that day, and then it is cooled down by 10°C every day until it reaches the seventh day. . If the temperature is not enough, the fire temperature can be raised to increase the pit temperature. Under normal circumstances, the sugar liquid is not afraid of heat during the crystallization process.
